🄘 Carole’s PSB with boiled eggs and anchovies…

🄘  2  šŸ½ Serves 2   šŸ›’ 12 ingredients ā± 40 minutes V LC €4

Broccoli, anchovies and hard boiled eggs combined with chilli’s, mustard and croutons make this is a lovely main meal salad.

Ingredients:

  • Ciabatta / Sourdough / Baguette
  • Olive oil
  • 500g purple sprouting (or tender-stem) broccoli 
  • 4 large free-range eggs, (at room temperature) 
  • 2 tablespoons Dijon or wholegrain mustard 
  • 1 tbsp white wine vinegar 
  • 1 pinch of caster sugar 
  • 2 large cloves of garlic, peeled and thinly sliced
  • 6-8 marinated anchovies, torn in half
  • 1 fresh red chilli 

First, make your croutons

  • 60g leftover ciabatta, sourdough or baguette, torn into bitesize chunks 
  • 1 tbsp olive oil

Step by step:

1. Make your croutons, tear the bread into bite-sized pieces. Heat the olive oil in a large non-stick frying pan over a medium-high heat. Once hot, tip in the bread and toss well to coat in the oil. Cook gently for 5 to 10 minutes, or until crisp and golden. Tip them onto a plate, then wipe out the pan with kitchen paper and set them aside. 

2. Bring a large pan of salted water to the boil, then add the broccoli and cook until just tender (about 5 minutes for purple sprouting or 3 minutes for tender-stem). Fill a bowl with cold water, then lift the broccoli from the pan and into the cold water to cool. Keep the pan of water on the hob. 

3. Gently lower the eggs into the pan of boiling water and simmer for 6 minutes, or until they are just soft in the middle. Drain and set aside.

4. Tip the broccoli into a colander, then cool the eggs in a fresh bowl of cold water for a few minutes. 

5. Next, combine 1 tablespoon of oil with the mustard, vinegar and sugar, plus 1 tablespoon of cold water and a little seasoning to make the dressing. Peel, then halve the eggs.

6. Peel and thinly slice the garlic, tear up the anchovies and trim and finely chop the chilli.

7. Put 1 tablespoon of oil in the frying pan, place over a medium heat and fry the garlic for 30 seconds. Add the drained broccoli and cook for 2 minutes over a high heat, until starting to colour.

8. Spread the broccoli over a platter, then add the eggs, croutons and anchovies. Scatter with the chilli, drizzle over the dressing and serve.

🄘  1 Ā šŸ½Ā Serves 4 Ā šŸ›’Ā 12 ingredients Ā ā±Ā 40 minutes €4

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 celery sticks, finely chopped
  • 1 tsp hot smoked paprika
  • 1.5 litre vegetable stock
  • 200g lardons
  • 125g small shape pasta or noodles
  • 100g spring greens, shredded or kale
  • 275g frozen peas
  • 1/2 lemon, zested and juiced
  • Large handful basil leaves, torn
  • 50g parmesan, finely grated

Step by step:

1. Heat the oil in a large pan over a low heat and fry the lardons, onion and celery for 10min, until softened.

2. Add the stock and bring up to a boil (approx 5 mins).

3. Stir in the pasta and cook for another 10 mins, to al dente, adding the spring greens and peas for the final 3 minutes of cooking.

4. Add the lemon zest and juice, basil and most of the Parmesan to the pan. Check seasoning. Ladle into 4 bowls and sprinkle over the remaining Parmesan

🄘 Carole’s quick minestrone soup

🄘  1  šŸ½ Serves 4  šŸ›’ 11 ingredients  ā± 35 minutes €4

Ingredients:

  • 3 tbs olive oil
  • 4 rashers bacon (chopped)
  • 2 sticks celery (chopped)
  • 1 medium onion  (chopped)
  • 1 clove garlic (chopped)
  • Tin of chopped tomatoes with herbs
  • Vegetable stock pot made up to 1 litre
  • Can of cannelloni beans
  • 1/4 Savoy cabbage, finely sliced and chopped to bite size pieces
  • Chopped parsley
  • Grated Parmesan

Step by step:

  1. Put 2 tbs of oil in a pan and add the chopped bacon, fry for about 3 minutes. Add the chopped veg and cook for another five minutes
  2. Add your stock and tomatoes. Bring to a boil and then simmer for about 20 minutes. 
  3. Add the cabbage and cannelloni beans and cook for another 10 mins
  4. Season to taste and serve with crusty bread and Parmesan cheese and a drizzle of olive oil.
  5. If you’re using your ThermomixĀ© the soup will be ready in half the time

Notes:

We used Kallo organic vegetable stock (Ā£1.79 in most supermarkets) with excellent results.

  • We used back bacon, but lardons or diced chorizo both work well. Leave the meat out all together for vegetarians and add in some pasta, rice or extra root vegetables.
  • If you don’t have cannelloni beans in the larder, use borlotti or black beans.
  • We used herb infused chopped tomatoes which add extra flavour. The Fresheno brand from Lidl is 37p for a 425ml tin.

Cathy Rentzenbrink

Cathy Rentzenbrink tells of the awful consequences of the “accident” that left her brother in a permanent vegetative state (PVS). Caring for a loved one in PVS is just one part of the story. Cathy fights her own demons and feelings of guilt but not in a ‘poor me’ way, but explaining the agonising decisions a family has to make.

I really enjoyed the book and the sensitive reading (if you choose it on Audible) by Jenny Funnell is perfect. The Last Act Of Love is deeply moving, but also uplifting and inspirational.

Travelling on the A26, The Chateau Grand-Rullecourt is a perfect stopover for visiting the beautiful town of Arras. You will get a huge room with a lovely bathroom and if you request the front downstairs room you walk straight out onto the lawn.

Chantel proudly shows off the piano that Chopin used to compose much of his work and you will get a wonderful breakfast with homemade jams and fruits from her garden.

Grand Rullecourt is a nice village to wander and you can pick up the D75 main road just outside the gates of the chateau. Arras is famous for its Baroque style architecture and Flemish central squares. Further afield is the Vimy ridge memorial, a magnificent monument honouring the Canadian forces that died in the first world war.

🄘 Carole’s pea and mint soup

🄘  2 Ā šŸ½Ā Serves 4 Ā šŸ›’Ā 9 ingredients Ā ā±Ā 30 minutes €4

Delicious and ready in 30 minutes. Make the soup in a saucepan and use a stick blender, or use a Thermomix©

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 1 clove garlic, finely chopped
  • 400ml cider
  • 400g frozen peas
  • 400ml chicken stock
  • Mint a good handful, chopped (extra leaves for garnish)

For the croutons and bacon

  • 2 slices sourdough
  • 77g pack diced pancetta

Step by step:

  1. Heat the olive oil in a large pan, add the onion and a pinch of salt, and cook for 10 minutes or until soft. Add the garlic and cook for 2-3 minutes. Pour in the cider and reduce by ½ to evaporate the alcohol, then add the frozen peas and chicken or vegetable stock. Simmer for 2 minutes, then add the mint and use a stick blender to whizz until completely smooth. Add a splash of boiling water if it’s a little thick. Season.
  2. Heat a good glug of olive oil in a frying pan. Cut or tear your sourdough into cubes and tip them into the pan. Remove them from the pan when cooked and wipe the pan clean. Put the pancetta into the frying pan and gently heat until starting to crisp.
  3. Ladle the soup into bowls and top with the crispy breadcrumbs and bacon. Garnish with a sprig of mint leaves

Tips:

Use leeks instead of onion for a milder flavour. Use two cloves of garlic if you prefer a stronger flavour.

We used Kallo organic vegetable stock (Ā£1.79 in most supermarkets) with excellent results.

A quick guide to making the croutons and crispy bacon topping. Make the croutons first so they don’t pick up the salt from the bacon. You won’t need to add any oil to the pan to cook the bacon as it will cook in its own fat. Dab the croutons and chopped bacon on kitchen paper to remove any fat before adding it to your soup.

Joe Wicks – Workout

3 years on and still going strong…

Being active before lockdown, I found it very difficult to be told to stay indoors and not go out, even for exercise.

I found the Joe Wicks exercise routines fun and easy to fit into the day without feeling out of breath or aching the next day. Then I joined the Joe Wicks programme called the 90 day plan and I’m still using it today. Some of the workouts are challenging but I get through them and always feel better for it. The recipes are yummy too!

I am lucky to live in a mountainous region of Spain and 15,000 steps is a great start to the day. A good workout helps my mental wellbeing as much as my physical fitness.

With two children and a demanding job, the great thing about the 90 day plan is I can fit the exercise routine in around school runs and appointments.

Anyway, it’s been three years of getting up and doing it and I feel fit, healthy, strong and small issues don’t bother me like they used too. It’s definitely helped my confidence and got me back to feeling like me again. Having 2 babies in Spain and learning another language was a struggle and following the Joe Wicks programme has helped me through.

Carole’s Chocolate and Fruit Crisps

This is a delicious petit four using not too much sugar. Easy to make and it keeps for up to a week in the refrigerator.

Ingredients:

  • 125g plain dark chocolate chopped
  • 90g stoned dates, finely chopped
  • 60g pecans finely chopped
  • 90g caster sugar
  • 90g butter
  • 30g rice breakfast cereal
  • 45g coconut

Step by step:

1. Line a 27cm x 18cm tin with greased, grease proof paper, or greased tinfoil.

2. Melt the chocolate in a bowl over a saucepan of simmering water, stir until smooth and spread over the greaseproof paper or tin foil and leave to partially set.

3. Heat the dates, nuts, sugar and butter in a small saucepan until the butter is hot, stirring occasionally. Then combine the rice cereal and coconut in a large bowl, stir in the date mixture and mix well.

4. Spread the mixture on the partially set chocolate base. Spread and flatten the mixture firmly so it holds together.

5. Chill until set. Invert and remove the greaseproof paper or tin foil, then invert again so the rice topping is uppermost. Cut what is needed into strips. Cover and store the remainder in the refrigerator for up to 1 week.
