
Goats cheese with peppers and honey make this an ideal toasted snack. Enjoy it on its own or as an accompaniment to a bowl of Carole’s minestrone soup.
I always have a selection of baked green and red peppers in the fridge. Peppers from a jar will do just as well.
Simply cut your baguette into slices and toast them on one side under the grill. When they are done flip them over and add a slice of goats cheese and toast. Dress the crostini with the peppers and a drizzle of runny honey. I don’t use garlic in this recipe as the goats cheese, peppers and honey are such a good combination.
